
Ingredients: serves 2
3 cups of grape tomatoes
1 red chilli, seeds removed
2 garlic cloves
2 stalks of celery
Juice of 2 oranges
8 cups of baby spinach
Pinch of salt and ground black pepper
1 sprig of basil
1 sprig of coriander
Garnish with basil and coriander leaf
Method
In a food processor or blender, blend the tomatoes, celery, chilli and garlic with the orange juice until smooth. Add the spinach, basil and coriander and blend until smooth.
Season if desired with salt and pepper.
Chill in the fridge for an hour before serving.
