Kingfish Carpaccio

Ingredients: Serves 4

200 grams sashimi grade king fish (other suitable fish sea bass or Snapper)
1 red chilli, seeds removed, finely diced
1 red apple finely diced
Juice ½ lemon
Pinch of salt
1 tablespoon of extra virgin olive oil
Garnish with fennel and flowers

Method

Slice chosen fish into thin slices and arrange on serving platter.
Drizzle lightly with lemon juice.
Sprinkle with apple and chilli and a light pinch of salt.
Drizzle with extra virgin olive oil.
Garnish with fennel and flowers.
